Recipe: Cashew Energy Bites

Ingredients:


  • 1 cup raw cashews

  • 1 cup pitted dates

  • 1/4 cup shredded coconut

  • 1 tablespoon chia seeds

  • 1 tablespoon honey or maple syrup

  • A pinch of salt


Directions:

  • Combine raw cashews, dates, shredded coconut, chia seeds, honey or maple syrup, and a pinch of salt in a food processor.

  • Pulse the ingredients until they form a sticky, uniform mixture.

  • Scoop out small portions and roll them into bite-sized balls.

  • Optionally, roll the balls in additional shredded coconut for coating.
