Ingredients
Cup Cake Ingredients
2 eggs
1 teaspoon vanilla
½ cup milk
2 tablespoons AbuAuf coconut oil (melted)
½ cup molasses
1 cup boiled sweet potatoes
1 cup AbuAuf almond flour
1 cup AbuAuf 100% cocoa
1 teaspoon baking powder
Coconut flour and rosemary (to garnish)
Cooking Instructions
Cooking direction:
Preheat oven to 170C. Brush the cupcake tin with oil or add muffin paper.
Mix wet ingredients with the sweet potato in a bowl. Add dry ingredients (almond flour, cocoa and
baking powder) and mix well into a thin dough.
Divide dough into the tray to make 9 muffins.
Bake for 20 minutes or until a skewer comes out clean from the middle of the muffin.
Leave to cool before transferring to serving dish.
Garnish each with a rosemary sprig and dust with coconut flour to give a snow effect.
