Ingredients

Cup Cake Ingredients

  • 2 eggs
  • 1 teaspoon vanilla
  • ½ cup milk
  • 2 tablespoons AbuAuf coconut oil (melted)
  • ½ cup molasses
  • 1 cup boiled sweet potatoes
  • 1 cup AbuAuf almond flour
  • 1 cup AbuAuf 100% cocoa
  • 1 teaspoon baking powder
  • Coconut flour and rosemary (to garnish)

Cooking Instructions

Cooking direction:

  1. Preheat oven to 170C. Brush the cupcake tin with oil or add muffin paper.
  2. Mix wet ingredients with the sweet potato in a bowl. Add dry ingredients (almond flour, cocoa and baking powder) and mix well into a thin dough.
  3. Divide dough into the tray to make 9 muffins.
  4. Bake for 20 minutes or until a skewer comes out clean from the middle of the muffin.
  5. Leave to cool before transferring to serving dish.
  6. Garnish each with a rosemary sprig and dust with coconut flour to give a snow effect.
